When I learn about Thai Noodle from my good friend, Stephanie, back in grade school. I use always eating Cup of Noodles, the chicken or beef but it just had no flavor or a good mixed of spices. One day I went to her house and her mother often me some soup. It smell so good like an Asian kitchen, more like a restaurant. So her mom show me how to make the Thai Soup. Even since that day oh 25 years ago, Stephanie's mom got me hook on this soup and now I have been buying it since then and Botan Rice, too.
There are 2 ways of preparing the soup:1) Cooking the oil and spices together in the boiling water with the noodles
2) Cooking the noodles with oil in the boiling water (the taste bland)
This is my way of prepare the soup and it always come out perfect for me. When I cook it on the stove, using the 2nd method. If you like the rice with noodles, cook the RICE FIRST. Takes about 20 mins to cook in the rice cooker.
1) Find the Soup. I use WAI WAI Thai Noodle Soup. You can find it any Asian Food Store. The soup cost about .50-.89 per package at the store, depending what stores you go to. Just shop around. I get the box of 30 package cost $7.50-8.99.
2) Very careful open the package. You will find the noodles, spices and chili and blue packet which is the oil.
3) I use a small pot to boiling water. It's say to use 400 cc. = about 1 cup 1/2 of water. I like fresh water that is pure. I use an Asian soup bowl to measure to use the water about 3/4 full of water is good. The water will evaporate when cooking. I pour the water in pot and ADD THE OIL in the blue packet, it's ok not boiling yet.
The Blue Asian Soup Bowl is what I use cause when pick the bottom of the bowl, you DON'T Burn your FINGER TIPS and the rice bowl, too.
The White bowl is not what I would use but if that what you have, just use a small plate underneath it. You will burn your finger tips.
4) Once the water is boiling and Now ADD THE NOODLES. Let it cook for about 3 - 4 minutes til tender in the oil you add already.
5) Now in the Asian Soup Bowl, add the spices and chili. Beware of the chili, it's spicy. If you don't like it don't use it. I add all of it in the bowl.
6) OPTIONAL: While the noodles are cooking half way though, you can ADD White Chicken (cook already) or Bean Spouts or green onions or fresh mushroom or other meats or seafood you like. I use the Green Onions and fresh bean spouts cause they are affordable. Here I did a bit of research to use what to use.
7) So the noodles are about done, and /or mixed veg's are cooked. Pour the noodles in the Asian soup bowl with spices it and let it sit for about 1 min. Then mixed it up with a fork or chopsticks to absorb the full flavors of the spices.
8) Now serve the rice in it's rice bowl and you have your soup. If no rice, I used saltine crackers with it.
